So, I was finally able to run Ubuntu on the computer with the CD, and it still shuts down. Therefore, the problem is definitely not software or driver related. It's looking like the PSU is really the problem.
The PSU I was looking into is on back-order, so I have to wait or look for a different PSU since I want to order from Amazon so I don't have any issue returning it in case PSU is not the real issue.
Any recommendation for other PSUs I could look into?
Linux live dvd/usb's are a life saver. People are too ready to blame Windows. You could run the memory checker but that may go tits up because of the flakey PSU.

I decided to wait for the EVGA SuperNOVA 1000 P2 from Amazon. I like the 10 year warranty, and I like its ECO mode button being on the outside, so I can turn it on and off at ease without opening the case.
I should get it by Friday! - I feel like a little kid waiting for his Christmas present :)

Okay, new PSU installed and the issue still happens. However, I now notice a pattern.
It shuts down during booting Windows (right before the Windows 10 logo) shows up. I press the power button, and it boots normally. Now, I am thinking it may be a Software issue, and if I reinstall windows it may be fixed. I am going to observe it for a few days before I do a reformat and do a fresh install.
Could it really be the issue was(is) both software and hardware?
These ones can be a pain in the arse. I'd strip it down to the bare essentials 1 stick of Ram, no peripherals, no hdds.
Reset CMOS load defaults.
Boot it off a Live Linux again. Live Linux USBs are more convenient than CDs.
Download Rufus. https://rufus.akeo.ie/ Make sure the correct flash drive is selected in Rufus and point it at your Linux ISO (Ubuntu is friendly)
The default Rufus settings should suffice and click Start. Boot off it and see how it goes.
Just had a thought leave the case side off and make sure the CPU fan is spinning up every time you start it. Long shot.
