The new start-button Menu is nice and very cute, but it's not for me. How can I turn off all the blinkin panels and pictures and just have a normal old style Menu with my apps in list?

You can try Classic Shell, if you want. It is a free start menu replacement.

.. you can even change Classic Shell's start button - I have one like the Win 7 Orb now- just use the button from this skin:
Seven VG skin
(Button images require 3 images as a bmp e.g.)

Yep, Classic Shell is the way to go for everybody who wants a traditional start menu.

Maybe also talking about live tiles, right click the app and turn it off.
