I have Notepad pinned to my taskbar. When I r-clik on it the display is as per below image. Two files are listed as pinned. I forgot how to add/delete these.

You should see a "Unpin" icon on those items in the jump list when you hover or right click on them like below.

However, I am lost here. I want to add a third text file to the pinned list and the tutorial you post seems not to show me that.

I seem to recall in W7 there was a way to modify taskbar config to enable or disable this as at one time it seemed to automatically pin every text file I would open.
If you don't have a unpin option for the current ones, then this feature may be disable like below and needs to be enabled again.

Do you have recent items below turned on for your recently opened files to appear in the jump list to then pin if wanted?
