John, is the second option (Open sub-menu's when.....mouse pointer) ticked in the Customise Menu? That may make the carrots visible, and you just hover over the red carrot for the context menu's to open up.
I know Brink is busy writing a tutorial (shouldn't be long now) for the Start Menu, so that might answer your query if my suggestion doesn't.

I'm not sure why the submenu expansion arrows (carets) are not showing though.
Thanks guys, I got it now. Note that these are NOT your normal flyouts where the whole folder is always cascaded out. These are actually listings of your most recently used clicks on that particular start menu app. I had the options for "store and display recently opened programs/items" turned off. With the options turned on AND clicking on something, I finally would get a caret! One whole item, heh. Not that much of a bother as I can always just click on Control Panel and use the window. Just different from the old start menu recently used listing and the old complete folder submenus. I use Quick Launch Toolbar all the time anyways.
PS I just noticed that the heading of the flyout is named RECENT. That is a clue to what it is for I guess.
