I noticed a bunch of errors looking at the event viewer which seemed to be related. The cycle seemed to be as follows:
The Windows Search Service is starting up and attempting to remove the old search index {Reason: Full Index Reset}. (Seems to be when I rebuilt index)

The gatherer service cannot be initialised.

    Details:
The Temp folder is on a drive that is full or is inaccessible. Free up space on the drive or verify that you have write permission on the Temp folder. (HRESULT : 0x80070660) (0x80070660) (This was exactly after and is by the category Gatherer, the drive is not full)

The Windows Search Service has failed to create the new search index. Internal error <1, 0x80070003, Failed to create application directory: Z:\Index\Search\Data\Applications\>.

The Windows Search service terminated with the following error:
    The device is not ready.

The Windows Search service terminated unexpectedly. It has done this ## time(s). (## is number of times, last one was 67 times)

Reloop to Gatherer problem or rebuild index problem.

The DataDirectory and DefaultDataDirectory is both set for C:\ProgramData\Microsoft\Search\Data. Could maybe set the first one to Z: then change it in the app to defaulf again see if that fixes it?

    Somewhere Windows 'knows' about
    Z:\Index\Search\Data\Applications\

    - can you try searching the registry for that? Just use Z:\Index as the search string.

If that doesn't help, then it must be elsewhere..

Can't do any harm to try..

    Where are your Temp folders?
Have you altered them from their defaults?

You can use these these in a command prompt to find out where they are
    echo %Temp%
    echo %Tmp%

I'd guess the temp folder referred to here is (normally)
    C:\ProgramData\Microsoft\Search\Data\Temp

    - except here it's the one expected on Z:\

One of my pokings were to look in registry for Z:\Index, and I did find some results but I couldn't touch them or edit them or remove them at all. I'll attach said findings in images.

I haven't moved the temp folders in any ways, and I did the commands to check. Both came out with "C:\Users\[USERNAME]\AppData\Local\Temp" (Not actual [USERNAME] but just to hide the real name)

    I have
Index refusing to start after rebuilding index unless USB inserted-1.jpg

Index refusing to start after rebuilding index unless USB inserted-2.jpg

    - which supports my comment on the temp folder issue.

I think that's what it should be set as, but mine is forced set on Z: and I can't edit it.

You should be able to using this if I recall..

PowerRun v1.6 (Run with highest privileges)

Take due precautions- back up beforehand. Danger lurks in becoming all-powerful.

I want to thank you all so much with your help. Running Regedit with PowerRun means I could edit those 2 values, following the default values (after backing up the whole Gathering Manager registry just to be safe and will keep that safe for a while).
I then rebuilt index and I didn't get any issues anymore, it deleted index and started rebuilding instantly.
Again thank you so much, both of you.
