1000 mbit/s = 125MB/s =cat6
so if your ISP is providing less speed than that , i'd go with normal cat6
no use getting a cable that can handle 1250MB/s , but ISP is only providing say a 50MB/s line

You are neglecting to take into account the speed at which the LAN is desired to operate at. There can be lots more traffic on the LAN than just internet.
