Windows Explorer sometimes locks up when trying to open a folder...

    So far so good.... I made the Google Drive Folder and all its subfolders exceptions in Windows Defender on Sunday, and there have been no lock-ups from Monday to Saturday.

    I will give it another week and call it solved.

    OK, so I gave it two weeks.

    We have only had one software/explorer crash in that time, and it didn't involve Google Drive. We traced it to a faulty USB stick which displayed the thumbnails for all the files, but locked up when we tried to open the images. It did this on two other Win10 computers and and also on an older MacBook Pro belong to one of the staff.

    Consequently, I am going to call it solved, and thank you to everyone for all the advice and help.
