I would be fine with anyone of them. After a format and clean install I do not intend to update to Win 11 anytime soon.

Windows 10 21H1 is running fine on both my cheapie HP 11 Stream and my Dell Precision workstation.

Thanks. I should ask Windows 10 21H1 is the latest Win 10 version, right? and if so is it a minor update from the previous version, Windows 10, version 20H2. Do I need to install the latter before installing 10 21H1 or can I just go looking for an ISO of Windows 10 21H1 and install that? TIA.

It is the latest. Since the version of Windows you are running is so old you will probably wanna go with a clean install. Use the newest media creation tool to setup a USB drive, backup your data and then clean install.
