I'm currently on Windows 10 Pro ver. 1909, OS Build: 18363.418
I want to update to a safe version but I'm not sure what version could be safe for me because last time I was up to date is that I keep receiving BOD and needed to reinstall Windows 10 every time.
The only major update (one that replaces system files and creates a Windows.old) since 1909 was 2004. The subsequent 20H2 and 21H1 updates were minor updates done by a small enablement package that installed like a cumulative update.
As a consequence the underlying system files for the current 21H1 version are the same as for 2004. Therefore 21H1 can be expected to be as stable as 2004.
I have honestly not had problems with any of the releases that I have been on over the years.

Currently been on 21H1 for a couple of days and hadn't been encountering any problems at all.
