I think you should do this
1. Ensure your personal data by way of images, docs, music etc is backed up to an external drive.
2. Preferably in addition to that if possible I would make a complete image on the external drive.
I do not know if you already have such image - but free software such as Macrium would make it for you

I use it and it is easy to use and IMHO is one of the best free such software.
3. Then I would go to Settings - right of taskbar
click the rectangle
click all settings
click update and security
click windows security on left pane
on main window click virus and threat protection
on window that opens click scan options
scroll down and click to check circle of windows defender offline scan
then click
scan now.

5. I am not suggesting that from the information on your post, there is evidence of a virus or malware, but two instances of explorer, one using considerable amounts of ram, is sometimes suggestive of such.
Do you single click or double click to open ? Where is the icon you click on - Desktop, Start menu, Taskbar, etc?
