Hi there!
I seem to have found the solution to my issue. Yesterday before I started monitoring the network traffic with the app you had suggested as a last ditch effort I reinstalled my network adapter driver suite, which in my case was killer networking. Since I know this company to have quite finicky drivers I just haven't updated their software for quite some time as everything was working fine. So I downloaded their last update from the beginning of December from my other computer and reinstalled from a flash drive. I rebooted, fired up the network traffic monitoring app and reconnected to the internet. To my suprise a minute after minute passed and nothing bad happened, no suspicious traffic no windows files deletion, no crash... I started browsing firefox, chrome, played some online games. Today I made a backup followed by a complete restore and here I am typing from my main computer that was giving me so much trouble.
Apparently it was killer networking driver suite that was the culprit. But I still cannot fathom out why it became suddenly buggy on the 1st of January 2020 and what is even more mind-boggling is its capability to somehow delete half of my windows 10 installation every time I connected to internet. I guess it has only quickened my decision to replace my network adapter with wifi 6 compatible intel ax200 m.2 card since I'm going to replace my current router with recently bought tp-link ax6000 one.
Anyway, I want to thank you all kind people who offered help and I'm sending my greeting to you all from my home country of Poland!
