My understanding is with Clover bootloader it's possible to emulate UEFI.

Yeah, the method described in there only works on motherboards that are hardware-compatible with the UEFI standard, but are still lacking an UEFI firmware regardless of the fact (because the manufacturer was too lazy). In essence, if the hardware can't support it, then you are SOL (Sh!t Outta Luck).
The Samsung 950 Pro is one example of an NVMe SSD that can be used as a boot device in Legacy mode by using MBR, as this specific NVMe SSD uses an NVMe Controller chip that has an NVMe Option ROM to make this possible. But most NVMe SSDs use an NVMe Controller chip that does not have this.
According to a Linus Tech Tips forum post, I guess the reason why I can use my Crucial NVMe (shown in the above pic) is because I'm using AHCI. Which means you can use EFI or MBR.
What other mode besides AHCI were you going to use on the NVMe. RAID mode? Optane mode? lol...
Yeah, that part of the forum post didn't make any sense. Neither does not being able to boot an NVMe from MBR.
Whether it makes sense or not, it is what it is.
Can NVME drives be partitioned as MBR and boot in Legacy mode? \
