Soapm, you can handle it anyway you want to, but I see this whole thing as a significant security risk and privacy risk for the church and it's members, including her. You are going to have to make sure the information is there at the church and not off with her somewhere. I said my piece, you can do what you feel is right. Just remember you were looking for advice.
BTW, I know how that "volunteer position" works; I have one myself. I haven't tried to get fired from it and I don't deal with anybody's personal information or any church financial information. It would probably be hard to get fired from my position even though I have told the pastor and deacons that they should find a backup or a replacement. My physical situation is not good and I might not be able to do this that much longer. But if they told me I needed to do my job differently than I do, I would do my best to comply with their wishes.
