OK, well the cause of this problem is due to the attempt to restore the sadly missed 'Windows Photo Viewer'. The procedure as outlined in TenForums tutorial: 'Restore Windows Photo Viewer in Windows 10' causes image file types to be listed as 'Unhandled Extension Handler Finder.
It's a damn shame because I much prefer 'Photo Viewer' over 'Photos'.
If there's another method of restoring 'Photo Viewer' without the file type problem I'd be happy to hear it.

Have had the same problem recently in Windows 10 v2004 (19041.264) and found that the only way to completely clear the 'Unhandled Extension Handler Finder' problem was to run a "Repair" on the Microsoft Photos App from the "Advanced options" choices.
