Yes. you can customise the Start menu. There are actually two, a personal one and an 'all users' one. What you see when you click Start is a combination of both. You'll need to work out which one needs the folder created and the shortcuts moved into it.

Thank you for the link. IWhat I want to do is group all the new (winaero) games into one heading on the left hand side of the start menu and create an 'icon' (?) to open that game or that group on the right hand side. Is there a way to do that?
Yes.
If by 'left hand side of the start menu' you mean the 'All apps' list, then creating a folder with a name of your choosing and moving the shortcuts into it will do what you want for the All apps list.

For the tiles on the Start menu, for each game in Start's All apps list right-click on it and select 'Pin to Start'. When done, you'll have a new group of tiles. You could just stop there and name the group....

...but if you want to combine all the tiles into one 'Live Folder' tile to make Start look tidier, then you can.
Click and drag one of the tiles and drop it onto the first to create a Live Folder, repeat until all the tiles are in the Live Folder, then give it a name. When you click on a Live Folder it opens to show all the tiles it contains, click on it again and it closes to a single tile.

See my blog post 769 Option 2 below to get the games and install them. They still get disabled by MSFT Feature updates, but MSFT only renames the .exe file to .exe.bak, so easily made operable again:
