Homegroup For Minecraft Servers Or What?
I have just heard that Homegroup is deprecated on Win10 now.
So how should we set up our LANs to allow for Minecraft servers?

so I somehow delete this Homegroup and somehow start up a 'workgroup' and put all the computers in it?
The computers are in the workgroup already, as the networking was fixed. I am not sure about what a minecraft server needs as far as folders and stuff. Just make sure the folders they need have permissions like you did with other folders on your network. Hopefully someone who runs a minecraft server can help more if needed.
It looks as if the existing minecraft server will use the new system without modification - It needs to be able to access the computers on the network in a two way link, which is the standard for Workgroup and Homegroup

It's not something I have any direct experience with but a quick read suggests to me that you will not need to do Much if any reconfiguration of the existing server
