I don't think game bar worked in AC Origins either, must be a Ubisoft thing.
Game bar works for me in both Origins and Odyssey unless the game is running in full screen mode. As long as they're in windowed or borderless mode, then game bar works just fine, both by using the Xbox button on my elite controller and by using the Win+G key combination. Game bar has always had an issue with most full screen games, for some reason.

Edit: Here's some info from Microsoft on game bar and full screen games in Windows 10:

How do I record a game if it's in full-screen mode?

For PC games in full-screen (or full-screen exclusive) mode, you won’t see Game bar, but you can use the Windows logo key + Alt + R to start and stop recordings. You’ll see the screen flash when the recording starts and completes. You can also use the Windows logo key + Alt + G to record the last 30 seconds (or whatever time you picked) if you’ve already turned on background recording.

If the shortcuts do not work for a full-screen game, press Win + G. You’ll see the screen flash twice confirming that the game is recognized. After this, you can then run the game in full-screen again and use the Windows logo key + Alt + R and Windows logo key + Alt + G.

Really wish you could move the game bar around.

I always try to run my games in fullscreen mode, I think performance is better. Also my monitor has a built in FPS counter, it only works in fullscreen mode and I love it.

@blackrose Interesting that you can still record with game bar in full screen mode, I will try that. I do see the screen flash when I hold the Xbox start button or press Win+G.

Note: In Windows 1809 "game mode" is now and on or off setting in Windows settings/Gaming. Before you could enable game mode from the game bar on per game basis.

I prefer fullscreen mode for games as well. I certainly get better performance in fullscreen than I do in borderless.

it's great playing the PC version of Fallout 4 with console commands
gave myself a quick boost to level 200 via the console - got 51 perks at once..!!
makes for all sorts of interesting opportunities in-game - romancing Cait like mad at the mo' - she's a vixen and no mistake..
don't advocate cheating per se; but the difference in gameplay is outrageous fun..

I still have the vanilla game running on the Xbox as well, so I have a "clean" game going at the same time..
    - that one's at level 32 and going smoothly..
    - gotta love those building glitches, great fun..

Here is some footage from my first Battle Conquest in AC Odyssey, yes I died. The combat keeps you on your toes. I think game bar recorded at 30 fps, should look cinematic.

At least they have Muzak on the elevator. I'm sneaking around with Deus Ex this weekend.

That is the game's own built in performance graph that you can pull up by pressing F1, it's quite handy.
