I wish my SSD temperatures were that low.
My 1TB Samsung 980 M.2 NVME SSDs have the following temperatures:
Disk 0: 51C | Disk 1: 48C

But my problem is that the fans in my laptop work at what I suppose to be their minimum level (I need to put my ear against the laptop to hear a distant hum). And even if the disks get very hot the fans don't work faster. The software that is supposed to control the fans isn't working:

On my laptop it's rare that I hear the fans running strong (except for games) I'm going to say that it's the processor that will increase the fans. When you make a copy between the 2 m.2 monitor the CPU usage with the task manager.

I have dell fan control software. It has like several cooling profiles including a silencer I believe. The acer program, which you think is buggy, was perhaps on a silent profile before it stopped working.

You must uninstall all controls software and reinstall them. In the windows control panel under power options reset the active power scheme to default settings.

Edit: With aida64 extreme you can test the cpu and see if the fans increase with the cpu frequency.

Edit 2: After installing coolbost and nitrosense you may need to search for the apps in the Microsoft store.

edit 3: @Lordubu The fans of your laptop cool the cpu and the gpu so if your ssd temperatures are high and you hear the fans increase it is not to cool the ssd/hdd. There is no fan to cool them like in my laptop, and the ssds are designed to operate at high temperatures under load, around 80° of memory. You do not have to be afraid.

Thanks! It was active on mains and inactive on battery.

I have reinstalled NitroSense and the dedicated "N" button now works, and launches the NitroSense "thingy". CoolBoost still doesn't appear on Acer Quick Access though.
What worries me is the temperature at which the factory M2 now runs.

it is usually around 45ºC when the laptop is idle
if I transfer a mere 25GB of data between the new M2 and the factory-installed M2 it will transfer data at around 400 MB/s and the factory installed M2 will get to 65ºC while receiving those files
if I put the fans on MAX in NitroSense prior to transferring the 25 GB the temp will rise to 59º instead of 65º

25GB is transferred in just over a minute, what will happen if I transfer 500GB?
If I transfer the same 25GB with the factory-installed M2 as the "sender" and the new M2 as the receiver, the receiver M2's temp will not rise above 37ºC, but the "sender" (the factory installed M2) will still rise to 57ºC. Why does it heat up so much more than the other M2, regardless of whether it is the sender or the receiver?

Conclusions:
there is something wrong with the temps of the factory-installed M2
I think these fans are fine tuned to cool the CPU and GPU, rather than the M2

I don't think there is anything wrong with the temps for your M.2 SSD. Like I said I wish mine were that low.

BTW, if I run CrystalDisk Mark my M.2 SSD temps rise to more than 90C. Now that is toasty. Since that is at their maximum temp I now try to avoid doing that very often.

The temperatures are good you worry for nothing. There are 2 temperatures, one for the controller and one for the nands. The controller can go higher and the nands lower. Look in the software that I indicated above to see if they indicate the 2 temperatures. You must look at the characteristics of your m.2 nvme to know its operating temperature. Also your factory m.2 nvme may be a pcie 4.0 x4 nvme which runs at higher speeds and therefore higher temperatures as well.

Edit: There is also a safety, the controller will throttle the frequencies if it gets too hot out of its factory operation.

Edit 2: You can try an adhesive thermal pad not too thick on the 2 m.2 but do not remove the "label" from the m.2 which must in fact also be a thermal pad but thin. As an example brand "alphacool", look at the reviews on Amazon to basically find out if they are adhesive.

Edit 4: hwinfo64 displays the 2 temperatures of the m.2 nvme. "Drive temperature 2" is that of the controller which will be higher than the "drive temperature" above.
