Do I need these? I think some of these drivers in Windows update are for these devices?

Yes in order to allow the motherboard to fully work with Windows, you need to install the drivers for all hardware.

This guide says that Intel Management Engine Interface Drivers are just bloat and telemetry though?

(The section is a little over half way down)

-intel engine management, or how it calls, omg laaaaaag , tho some people had problems not having these installed, so test this out, also i have feeling it improved mouse accuracy on older pc. Also you can enable to turn this device on/off in dev manager and what it does

What do I actually need and what can I not install/update?

Like for example, some of them say Intel Xeon and I have a 6th Gen Core i7.

The Intel chipset .inf files provide the descriptions that make device manager look pretty. They get rid of the yellow bangs.

    What do I actually need
If there are .sys files then they are drivers.

Like for example, some of them say Intel Xeon and I have a 6th Gen Core i7.
    It doesn't matter.

The Intel Chipset Software Installation Utility (also known as Intel® Chipset Device Software) is often called the chipset driver or chipset drivers, a common misconception... The current Intel Chipset Software Installation Utility gives the product name for the piece of hardware. This information allows the operating system to display the correct name for that piece of hardware in Device Manager.
How do I Use the Intel(R) Chipset Software Installation Utility?

Something from 2018 that was about what someone perceived as saving energy without hard evidence by utilizing equipment for monitoring the usage through the power line to the various devices. Nothing was stated about the drivers and telemetry being bloat.

Telemetry only comes into play when problems are reported or when the OS does a update to find out what is needed. Without the Engine interface drivers, the hardware on the motherboard is not going to work. Even though it may state Xeon, you can go into Intel's website to see what other CPU/Hardware those drivers are for.

Instead of guessing and only having limited information at hand for us to better help you, post the URL after running Speccy, or post the technical spec's on the motherboard/computer. The other is that you are all over the board on what you are wanting to do. If you want privacy, do not use tech or let written or verbal information get out to others. You want to break the OS, keep "tweaking" it with these things you find online or want to believe that they help when they do not. A firewall ruleset does more to help protect what goes out and in than just disabling random stuff in services, deleting stuff from the OS or drive.

I suggest using this procedure if your current driver updates do not resolve the entries within Device manager, Other devices [which is a euphemism for No driver installed].

Mark all optional updates (drivers) and let them install.
