MS Office Document Scanner + HP deskjet

Running Windows 10 v.20H2
I recently bought an HP All-in-one Deskjet 2700 Printer. For years I also used the scanner facliity in MS Office 2003-2007 (Microsoft Office Document SCanning), with different printers and in Windows 10. I know it's old (like me) but until now it was fine for me!
But I can't get it to recognise the HP Printer. The MS Office scanner facility was useful as it could scan documents directly into MS Word for editing.
If anyone can suggest a solution, I'd be grateful. HP 2700 has its own scanner but only scans docs into PDF.

Microsoft Fax and Scan is what I'm using with my HP Deskjet F4100 and HP LaserJet P1102w. Just FYI post.

My HP printer-scanner has HPScan [which includes ReadIris OCR] which has a Save as editable text [rtf] output definition that seems to be suitable for your needs. I imagine it would be less hassle than sorting out MODI.

Thanks for your help. I've gone ahead and purchased a copy of MS Office 2013, and I'm hoping Word 2013 will make it easier to scan and edit documents.

Thank you to everyone who responded to my thread. I'm grateful for your time and for the helpful responses. Following one of a number of suggestions, I now am using the OCR in MS Office 2013, which is smoothly converting my PDF docuemnts.
