Which board would people go for out of the ones listed below? Also if anyone here is using one of the boards please provide your feedback.

I have a Crosshair VII Hero. It's a good board, but overly expensive if you don't need all its features. It's also an X470 board; if you're buying new, you might prefer a Crosshair VIII Hero, which uses the X570 chipset. The main thing you get with that is PCI-E 4.0. The main use of that is if you're prepared to pay extra for a PCI-E 4.0 M.2 SSD.
My main system uses an Asus TUF GAMING X570-Plus, which isn't a high-end board. Looking at Newegg, there seems to be some sort of MB shortage. The sellers that have boards in stock are charging grossly inflated prices. I hope that things are different in the UK.
Also consider the long term support provided. Gigabyte tend to stop providing updated motherboard drivers and BIOS updates after about 2 years. They do however continue to answer technical support queries on motherboards for the life of the board. I have no recent experience of Asus.
Five Gigabyte boards in a row - X58A, Z87, Z170, Z270, Z390. No issues...

I like both MSI and Gigabyte. Currently using MSI boards.
I always use Gigabyte and Asus boards. Both have always served me well.
I would go with the x570 chipset. My son's build running the Ryzen 3800x is on the Asus Tuf Gaming x-570 plus wifi board. It's been solid for me and offers everything we needed. No need to spend more in our case on the higher end boards. Money better spent on other components for us.
