I have an Epson scanner and it has a very nice scan program, but when I launch scanning from another app, it brings up the Windows scanning interface. The default is 100dpi for some reason and I would like to set the default to 300dpi.
Is this possible? How can I accomplish it? Thank you friends.

That would be' Epson Scan 2' ? That's what came with my Epson printer/scanner......
Which app in particular? The only app I can find that brings up a basic interface such as you describe is MS Paint, and that interface seems to be built in to MS Paint, not provided by Windows. Is this what you see? If so, there appears to be no way to configure its defaults, they seem to be hard-coded into MS Paint.but when I launch scanning from another app, it brings up the Windows scanning interface. All my other apps capable of calling for a scan (from a near 20 year old PaintShop Pro 7 to the latest LibreOffice) call up Epson Scan 2 when I ask for a scan.
If you go to 'Settings > Devices > Printers & scanners' and click on your scanner, then on Manage, you'll see that Windows is set for a default of 300dpi already.
I did set the the "Settings > Devices > Printers & scanners" to 300dpi however it does pull up the exact screen you show when my program launches the scanner.
Depends on the application, some can only access the WIA method, and some the full scanner application.

Resolution > 150(default), 300,600.
If you set that to 300 dpi it will remember that the next time you open it.
You can ignore the next bit of waffle...
Paint.NET/Paint defaults back to 150 dpi the next time you use it.
Despite setting profiles in Windows 10 settings (WIA).
The WIA is limited on mine to 150, 300, 600 dpi. (MS Scan App, Paint.NET, Paint, OneNote 2010).
OpenOffice, IrfanView give the choice of the WIA or Full scanner App.
The full scanner app has a range of 75 - 1200 dpi.(OpenOffice, IrfanView) This has default profiles you can set, from dpi to file type etc, a whole range of options.
Obviously the simplest way is just to use the full Scanner application in the first place.
e.g. with OpenOffice (or IrfanView) the way highlighted opens the full scanner application.
