Yes Bree there are workarounds but I just can't be bothered. I'll likely let this release settle in and then update my daily drive.
What I did for initial testing here was to grab a spare SSD [actually an NVMe], and set windows 11 up on it as a Windows to go install. That way I could run the OS on different compatible systems using their native hardware, if its deemed not suitable it's just a case of disconnect the drive and reboot into the existing OS
The recent version of Rufus will setup and install from an ISO file
It's a phased rollout. Of my two devices supported for Windows 11 one got offered (and I took) the 22H2 upgrade on Day One, the other is still waiting to be offered it.
If your feeling impatient, then you could use the MCT, make the ISO, and do an in-place upgrade. Did that for my unsupported machines (they'll never get offered it anyway).
