Well, I decided to stop at one of the Inns in Easthaven and quaff a few mugs before heading out...
It's cold out there in the Spine of the World.

Good morning folks its 34° outside this morning, with temps getting into the 50's later today.
    Morning Mike and Sammy

Similar temps here. Tomorrow morning could go below 30. But we'll see

LoL. I'm well past my 2nd month on W11

I never tried to make W10 look and feel like W7 when I got the upgrade, and I'm not inclined to start doing so now in W11. I prefer to see how I can get on with the changes, and so far I'm not finding it too difficult/annoying.
There is Win 8 missing in your description

And I'm having the exact deja-vu now with Win 11 (as I had with Win 8).. Win 8 era was the only Windows when I have to play with third party Start menu options.. And now this is repeating with WIn 11

Having unorganized Icons for Start menu is a joke, more or less. I don't even do that on Desktop, and I don't use Desktop icons any more.. - I may have to do it again, if using Windows 11 Start

I have solved this problem with classic taskbar (ExplorerPatcher, but the same is available via registry or Winaero). No apps for Start, just opening it directly in All apps list

This is MS idea of great Start menu (according to Win 11). Only on smaller area:
