I assume a lot of sharp knives in your house then Ghot.
I have a reminder set to sharpen knives every six weeks. I must go look and see what grit my sharpening tool has.

Well that is a fair system.
I live to close to get paid for travel and if a short case you basically get nothing. Some employers will compensate. Really tough on some.
Until I got this knife with S30V steel (really hard, holds an edge for a long time), I always used Japanese water stones.
Water stones are awesome. But this S30V is harder than tool steel. Have to use diamond sharpening stones.
For normal steel, up to and including tool steels, I used King 1000 grit and King 6000 grit water stones.
They would put a razor edge on most knives, chisels, plane blades, etc.
Water stones wear down... fast... so get the thicker ones. Like this maybe...

They also have these, more modern water stones. Supposed to be even better, and longer lasting...
