Long ago I was the same. As the years have passed, I cannot have less than 3. For a while 2 was enough and great but like I said as time has passed.... I like to have my browser full screen on the main, something usually playing on the one on the left, either TV or a movie or something else. The right one has my security cams and sticky notes. A bit of this will change tomorrow when I setup the cams on the old pc, but will keep the 3 screen setup. I do not have an actual TV and use the hdmi port on the left monitor to view stuff like TV and movies. It lets me keep my main screen for browsing.
