Well, when it looked like just me & my Wife were going to be here for T Day, she ordered a already cooked, spiral cut ham from Schwan's. We were just going to heat up some of that, along with some pre-cooked mashed potatoes & other stuff.

But.....now we have to have a guest over for T Day & she wants to do a turkey thing.
Your guest doesn't have parents ?
I would think she would go there instead of imposing on you.

    Is she buying the turkey?
She wants to "pitch in" for it. Saying we all put in towards it. I'm not so eager to do that.

I see no sense in making a full spread for 3 people. Me & my Wife made a full turkey dinner a few years back & 3 weeks later, we were still eating leftovers.

I'm suggesting we just go with what we have, maybe get a cooked turkey breast at the market. Nothing too big or fancy. And something easy to clean up.

I don't know if she's going anywhere on T Day, her Mom passed away a few years back & her Dad lives alone, so I'm sure he's got the same train of thought, nothing too fancy.

My T day will be at Cracker Barrel as most of the restaurants will be closed.

They're open? I guess there are some restaurants around here that might be open, but normally everything is shut, at least until the eve's. We have one of those in the next town over, but we prefer to stay off the roads during any holiday if we can help it.
