The season is over with for honey crop just need to harvest it. The spring season is the only crop I harvest the rest of the year is for the bees as that honey is too strong for my customers. Demand for my honey is high as I already have 110 buckets sold just need to fill them.

I had thought since you had a warm climate most of the time the honey the bee's produced was usable
all of the year.
What part of it is too strong, is it the flavor some how ?

The flavor of summer and Fall honey is strong and has a bite to it (after flavor) Willow honey has a bitter after flavor and is a spring honey which I do not get, the bitter taste really comes out when you put it in coffee.
