I'll likely give it a go tomorrow some time. No lockups or freezes running PiVideo from Raspbian. It's been streaming all day with no issues. Its faster on 5GHz, more FPS. Even though signal strength is a lot lower. It's still glitchy though. I switched back to 2.4 as thats where I was having my issues. I want to also rule out my WIFI as the issue. I'm going to leave that Pi running all night and see if its still streaming in the morning. If it is, I'm going to do a fresh image of Raspbian and follow the guide for installing Motion Eye into it. Then go from there. I really want to rule out the Pi as being the issue. Only just bought it so need to sort that out before my return / refund period runs out. I'm 99.9% sure if a software issue at this point though. Which is good. If I really had to I could swap it with my other 3B+. PITA to do that though as its mounted in my bread board rig. Not so easy to remove. I'll let you know how it works out.

For what its worth, I really like the Motion Eye web UI interface. No having to sudo edit files. Good quality video. Easy to change the resolution etc. Having to have an ethernet connection on first boot is a bit of a pain though. +'s and -'s.
which browser? IE? Edge? or Chrome?

If it was an old Nicon well yeah maybe get upset. I have at least one, not worth a plug nickel, plastic 35 mm in the basement somewhere that would make a nice Pi case with a camera in it. It will never ever be used as a film camera again thats for sure.

The Motion EYE Web UI I'm viewing in IE and Edge. Video quality is the same, as near as I can tell, in either. Nice and fluid with hardly any lag. The actual Video stream I can't access in IE or Edge, as I mentioned earlier. I can view the stream in Chrom, but the actual view window seems smaller, FPS looks to be the same though.

The only one that lags really bad is the Raspbian PiVideo Stream when viewed in Chrom. Its like its in slow motion on 2.4GHz WIFI @ 1280 x 720. On 5GHz its better but still stutters a lot.

I'm using 1280 x 720 in Motion EYE, mainly because its a supported resolution. 1280P30 @30 FPS max or 720P60 @ 60 FPS max. I'm not getting 60 FPS but its a better video with less jitter and lag. Maybe a little fussy, but I'll trade that for less lag. One thing with motion eye is you can reduce the video quality with a slider in trade for more FPS and a nicer feed.

Ran all night and still streaming video with no issues. I would say my PI 3B+ is fine, its a software issue with Motion Eye OS. I'm leaning towards it being a WIFI driver issue. It's not the Pi, and I'm pretty sure its not the Lexar Micro SD cards. They work fine in the other Pi 3B's. I may do this next install on my Spare Sandisk card anyway though.
Going to try installing it into a stock Raspbian install latter today. From the tutorial I posted earlier. That Pi is currently all setup on my spare media hutch in the bedroom, so I'll have to wait for my wife to get up before I can do anything. I took the gazebo down yesterday so no more going outside to tinker with my Pi projects.
I'm thinking the version I'm running now is running in Raspbian Lite? The prebuilt image from his site. I'll post how it goes when I get a chance.

Haven't done some pi stuffs lately. No issues with my Pi Cam since I made it. I like the versatility of the method I used. I can still use the pi as a music player via bluetooth using the ssh button app.
I spent most of my day yesterday fixing the tub caulking. Had to remove everything and apply a fresh one. This will be good for another 5 years at least... :)

The "Install on Raspbian" didn't work. Not for me anyway. I clipped and pasted the lines in, only errors were when I fogot to add sudo to the begining. IE and Chrome won't connect to that Pi? I even rebooted it? Taking a break for now. The guide doesn't really say what to do at the end?
