Here's an interesting question: Could one small setting in the BIOS have screwed things up?

I simply used the BIOS' OC Genie tool to OC my CPU to 4.4GHz. That was 2 nights ago. I have effectively played games through that entire 2 days without any crashes. Is this odd? Or is there possible sense to this.

Yes, it does, many a times.

Your CPU is .... Intel Coreā„¢ i7-6700K Processor (8M Cache, up to 4.20 GHz) Specifications
    Frequency GHz
    Processor Base Frequency 4 GHz
    Max Turbo Frequency 4.2 GHz

If it runs stable at 4.4 GHz. then let it run.

Been a little over a week. No crashes. Must have been a BIOS related setting. Marking this as solved.

Thanks for all your help, Arc!
