    Sorry about that
It is a devil of a job to find the correct card without knowing the EXACT details of the gigabyte version - revsion of that card
Gigabyte NVIDIA GeForce RTX 3060 Ti 8GB GAMING OC Rev. 2.0 LHR Ampere Graphics Card LN118962 - GV-N306TGAMING OC-8GD V2 | SCAN UK
Searched for the model number on the box

It's this one GeForce RTX™ 3060 Ti GAMING OC 8G (rev. 2.0) Specification | Graphics Card - GIGABYTE Global

Really don't know what do to at this point. I formatted the computer, with only steam installed and nothing else (no veracrypt), I ran GTA 5 for about 20 min and got another crash.

I am now considering replacing the motherboard and try a more high end card like this: "MSI MPG Z590 Gaming Force". This has USB-C and PCIe v4 unlike my current card.

most all boards now are pcie4, its processor dependent. took me a bit of digging to find out why my 2060 ko was only running at 3. its only a 3 card lol. i can do 4 because my cpu has it if i go up to a 3xxx card but im a poor broke guy :)

Anyways, that looks like a good board, ive always been partial to ASUS boards myself. never had any issues. It is possible you just have a defective video card. Even tho the power supply looks good, have you checked in the bios to make sure voltages are ok? Meaning 12v is running 12v, not 11.8 or 12.5 (same for the 5v line)

From what I can tell, the voltage looks ok

I can not possibly have gotten two defect graphic cards in a row. I already returned a 3060 card and got a new 3060 TI card.

Ya the voltages look perfectly fine. You'd be surprised on getting 2 bad ones in a row. It all depends on the human controlling the machine making them. Like when i worked in a bakery, setting the machine to slice buns, i totally forgot to adjust the blade height. it was close, but not quite. took a dozen packages before i noticed and said wait a minute :)

You still have ram at 1.35v
that is tested voltage at 3600 or should I say SPD is 2666 at 1.2
According to the motherboard site on your CPU the recommended ram is
2666 or indeed less - as I commented some posts ago

That does not mean you cannot OC the system, but to test for stability it is vital to set NO OC even on XMP

    From your motherboard site specs
    Intel® Core™ i9/i7 processors:
    DDR4 4600(O.C.)/ 4500(O.C.)/ 4400(O.C.)/ 4300(O.C.)/4266(O.C.) / 4133(O.C.) / 4000(O.C.) / 3866(O.C.) / 3800(O.C.) / 3733(O.C.) / 3666(O.C.) / 3600(O.C.) / 3466(O.C.) / 3400(O.C.) / 3333(O.C.) / 3300(O.C.) / 3200(O.C.) / 3000(O.C.) / 2933 / 2800 / 2666 / 2400 / 2133 MHz memory modules
    ===============================================================
    Intel® Core™ i5/i3/Pentium®/Celeron® processors:
Support for DDR4 2666/2400/2133 MHz memory modules
    =============================================

and unless I am mistaken your cpu is
    11th Gen Intel(R) Core(TM) i5-11600K @ 3.90GHz

Yeah, you are right. I have it overclocked right now. I tried to turn it off before and my computer still crashed, but I can try it again now with my new 3060 ti card.

Go to page 25 of the online manual
    https://download.gigabyte.com/FileLi...ing-x-ax_e.pdf
see the image of the tweaker screen
    set XMP DISABLED
    and voltage Auto
check speed is 2666 and voltage 1.212

    as shown on that image.

When you did the settings before was XMP disabled - because if not and you set voltage only ram would run at more than 2666 SPD speed but voltage would then be limited to 1.2, wheras if I remember correctly your ram is 2666 SPD at 1.2 and tested 3600 at 1.35

I know this is a slightly different board but it is still Gigabyte with the Z490 chipset
Z490 System lock ups, and BSOD | GIGABYTE USA Forum

very similar to the problems you are having and solved by turnong off XMP and running SPD on ram

Confirmed that it now runs at 2666 and it shows 1.212 in BIOS. Still crash after 20-30 of gaming. Also tried to run a much older version of the Nvidia drivers, did not help.

Still crash after 20-30 of gaming
is this on all games OR only on GTA and does it still crash if you lower the resolution

It is definitely a timeout issue on the graphics driver but that does NOT mean it is the driver or a fault of some manner on the card or the slot, or the power to it

The problem can be caused by ram - settings etc
    temps
    other running processes

It will help I think if I know more detail of in what game etc this crash occurs, and as I mentioned if it occurs in lower demands

    EDIT
I have just chcked some of your logs again
    GlobalProtect "c:\program files\palo alto networks\globalprotect\pangpa.exe" Public HKLM\SOFTWARE\Microsoft\Windows\CurrentVersion\Run

    Have you installed this please
If so DISABLE IT or uninstall it and retest for BSOD on gaming
