I can try now, if I am able to format the E drive in Win10XPE am I able to then fresh install windows onto the E drive using windows 10 install media?
If you already have such an installation medium (e.g. a USB device), you may boot into Win10XPE, open the "sources" folder on the device, and run "setup.exe" therein to clean install Windows. If you don't have such a medium, just mount an ISO file. If you don't have an ISO file, download it from TechBench by WZT (v4.1.1)

I think my new windows installation is set up now on my 1TB SSD and everything seems to be working as normal. I plan to just format and then remove the M.2 as it seems that would be best due to it being problematic.

Thanks to the folk that have helped me out and managed to get everything back to normal, it's greatly appreciated!
