Great news!
I used the AgentRansack software again to check I hadn't missed anything. I went into my eclipse workspace folder on my C drive, where my java projects are kept, and saw a lot of files named '106e72d1be73001b13f2a78bf650afb5' etc. I thought I should try open one to see what they were and in notepad and to my surprise it was in fact one of my class files from my project.
So with some more looking I have managed to find the source code of all my files.
Now that I have managed to recover my critical files what would be the best way to get my machine back to normal? As I am no longer too worried about keeping any other files.
Test the drives:
> Pass > reinstall OS or use as a storage drive
> Fail > replace
Run HD Tune (free version) (all drives)
HD Tune website

I ran the HD Tune benchmark on my Crucial 1 TB SSD and everything seems okay but I can't say the same for my 128GB NVME SSD. It wouldn't run the benchmark on the NVME drive due to an error and doing the error scan there is a lot of damaged blocks. I also ran the benchmark on my HDD and there seems to be no issues there.
So I'm guessing I should put the OS onto my Crucial 1TB drive and then replace my NVME?
These are quick SMART:

These steps / tests can be performed overnight:
a) HD Tune full error scan
b) Sea Tools for Windows long generic test
SMART results are instantaneous.
Benchmarks typically take < 5 minutes
Surface / Error scans depend upon the size of the drive, underlying problems, etc.
Long generic scans depend upon the size of the drive, underlying problems, etc.
I've run both at the same time on the same drive as part of routine testing.
For critical testing it's recommended that one test is run when nothing can impact results.
When I tried to open the HD Sentinel software it kept giving me errors. But this is the CrystalDiskInfo results:
The SMART test is used to predict drive failure.
In Ten Forums we see drives with major problems or failure that have high SMART scores.
The NVMe drive temperature is relatively high.
See if you can clean fans / vents to provide better cooling.

OK, while I was asleep much has been done and the OP has recovered his important files. So it is no longer a data recovery project. The OP wants to restore his OS drive which shows RAW.
I believe that 1TB drive which shows as RAW is an MBR drive since there is no EFI partition.( This would have been clear had he posted the Partition Wizard screenshot as requested) It does have a drive letter E. So the partition exists. Now a drive can become RAW if the volume Boot record in the first sector of the partition gets corrupted. It can also become RAW if the Master File Table gets corrupted.
The OP has to run TestDisk (Run as administrator) from his operating Windows installation on Disk 2 (119.23GB) in his Windows Disk Management screenshot
Screen 1: [No Log] Enter.
Screen 2: Select the faulty 1TB drive [Proceed] Enter
Screen 3: By default it will show the filesystem it found. Enter
Screen 4: [Advanced] - Filesystem utils - Enter.
Screen 5: Does it show your partition? Is [Boot] highlighted? Press Enter
Screen 6: Shows the status of the Volume/Partition Boot Sector and its backup.
Various possibilities exist.
1. Boot sector - Bad
Backup boot sector - OK
Execute the [Backup BS] command ( writes the backup to the start sector of the partitďon when you confirm "y" in the next screen)
2. Boot sector - Bad
Backup boot sector - Bad
Execute [Rebuild BS] command ( Rebuilds the Volume Boot Record and writes it into the Partition start sector and partition end sector)
3. Boot sector - OK
Backup boot sector - Bad
Execute [ORG. BS] command. ( this will copy the original boot record in the partition start sector to the partition end sector and make it OK.)
The above three operations should repair the boot sectors and make your drive accessible. Please remember whenever you see a
[List] command in the page, give that command and if the files are listed copy to destination. if the files are not listed you can go back to the previous page by [Quit] Command or pressing Q .
The fourth possibility and an important one:
Boot Sector - OK
Backup Boot sector - OK
Hmmm... both are good. Then what is the problem? MFT???
You will execute [Repair MFT] command.
If TestDisk says 'Both MFT and MFT mirror are OK" Close TestDisk. You will run check disk on that volume to correct the file system corruption. Caution: You will run checkDisk only and if only TestDisk confirms that your MFT is OK and you will not interrupt Check Disk for any reason)
My post here and the joyous OP: External hard drive visible in Partition Magic but not explorer Solved - Page 2 - Windows 7 Help Forums ( In this thread TestDisk said MFT and MFT miirror are OK.The OP then ran the checkDisk Command given there and regained his drive. I repeat- the above caution note applies) The checkDisk command:
CHKDSK K: /f /v /r /x Press enter. Note: Replace K: with the actual drive letter of the drive
(If TestDisk says it is unable to repair MFT you will have to use a commercial software to recover the files - GetDataBack or active @ File recovery. These are "try before you buy" software. If these show your files, you may be able to preview/open the files and check the file integrity. You can buy a license only when you are satisfied.)
If at any point you have a doubt in running TestDisk and require clarification post the screenshot and quit TestDisk.
