I'm looking at your latest crash dump and still seeing the rt640x64 driver as being responsible for the crash.
The version you now have installed is Driver c:\windows\system32\drivers\rt640x64.sys ver10.26.328.2018 which still does not match the one I saw on the motherboard website and reported in post #3. Can you try again to use the latest driver provided by Gigabyte.
The one I downloaded from their site is 10.26.328.2018 even though it says 10.026.0521.2018. I tried different mirrors too. Ill try looking from another source. Thanks for pointing that out.
I downloaded a way older driver just to try lol. I don't know what to do anymore hahahaha
The misbehaving driver was rt640x64.sys in the latest two BSOD.
The motherboard manufacturer displayed two LAN versions supported for Windows 1709:
The second version was the version in the latest BSOD: 10.23.1003.2017
In the OP the misbehaving driver version was:

This will be trial and error to find a driver version that produces computer stability.
If multiple drivers fail this often indicates problems with the underlying hardware.
If the next driver fails consider swapping the hardware or finding a replacement.
Alternatively a USB LAN device is an additional option.
There is a method to turn off Windows updates of non-Microsoft drivers and this can be tried if needed.
