It was there in Win8/8.1, I'm dead sure - and now it's gone.
Funny enough, it's also not an option in thick clients like Outlook 2010 or 2013 because apparently the aliases are treated as individual accounts, not as child objects with settings and parameters underneath the actual Microsoft main account.

This lack of feature makes the Win10 Mail App rather useless because when I need to open outlook.com to switch to a different alias to be used in the mail app, I can just as well stay there and send my mail from there, rather than from the app.
    +1 +1 +1
I have my outlook.com shortcut on desktop and do away the silly "middle man" Mail app.

    Finally a fix!!

I registered to this forum just to post a fix to the notorious windows 10 mail alias issue... this is the only true fix that apparently works, and I tried it for myself. I felt obligated to share it with the millions of people probably having the same issue.. original post is here Windows 10 Mail App Shows Wrong Alias - Microsoft Community

    Fix:

    • Click on the start button and type "regedit". Run the Registry Editor.
    • Go to HKEY_CURRENT_USER -> SOFTWARE -> Microsoft -> Active Sync -> Partners. There should be one child folder here for every email account you have configured.
    • Find the folder for your account - look for one with a "User" key that matches your old email address. Change the "User" and "Email" keys in this account to your new account.

    it's easy but hidden--here's how:

i know this a reply on an old thread, but as far as i can see, there has been no actual solution to use with ANY account--not just the MS emal address (primary email).
i got here by looking for the same exact thing.
    here's what i found:
    open mail app.
hit 'settings' (gear symbol) at the bottom left of pane.
hit 'manage accounts' on the upper right of settings pane.
    select the desired account .
    hit 'change mailbox sync settings'.
right above the words 'sync settings' at the bottom is 'send your messages using this name'.
    change to desired name.
    voilą!! all done.
why they hide it here is beyond me.
    hope this helps others...

This is actually the right answer. Just add both aliases as different accounts and then bring them together with the "link inboxes" button under the "Manage Accounts" menu you get when you click on "Accounts"

Agreed. Even basic things like send/receive progress is missing from Windows 10 Mail.
Work around to fwd mail to your gmail account or copy and paste the contents to a new mail conversation or fwd the mail again from the gmail account to your recipient. I'm pretty sure you gave your correct name to Google! If you are trying to use another bogus name then create an email for it on yahoo or other service.

Copy and paste makes the recipient unaware of your Windows account name (wanted mine anon too, stuck with it short of a new Windows account and trying to move your user profile that won't go smoothly)!

So name on the Email seems to be directly tied to what you told MS when you created your account!
