That's true TC, To me Mozilla appear very amateurish at times in their distribution approach. Having said that version 56 doesn't really concern me anymore, for years all I've used are the FF beta releases.
Suppose to be Nov 14, but I don't know for sure. A lot of extensions are still in Beta that a lot of people rely on. One being LastPass. They may need to either push it back, or allow legacy Add-on for a while longer.

I can't see them pushing the release back more than a couple of days. Mozilla seems to think they have given the extension devs plenty of time so if some haven't jumped on board then hard luck.
