Check the Google Chrome Stable channel. You'll see that it shows the latest release is version 97.0.4692.71.

If you manually update or test new releases of Chrome, you can use the existing "TargetChannel" policy instead to switch Chrome to an extended stable channel. Instructions on how to apply the necessary policy can be found here.

regarding these group policies like "TargetChannel" for Chrome, they only work when the computer is joined to a domain or managed by MDM or Azure Active Directory. these policies either have no effect or do not work when not connected to a domain (aka. not managed by Azure or MDM) or the computer is by itself

Note: Only domain-joined or MDM-managed computers honor policies set for the computer by Group Policy. Therefore, you must ensure that all your devices are joined to a Windows domain controller or Azure Active Directory domain, or are MDM-managed.

    consider this Google's "fine print"
