Saving text file outputs for modern internet pages often causes a complete mess.

Consider printing to pdf instead. You can use Microsoft Print to PDF for this. It's a 'virtual printer' and will be in the list of printers you can select from.

To save essential text I just cut the text from the web page and paste it to a Word document.

And if the site is configured so you can't copy the text, then you can use a program such as Capture2text (free) to perform optical character recognition (OCR) and thus grab the text.

Firefox, for example, has quite a number of addons that might help too.

No idea what that means. It seems you have something very specific in mind at which ( can only guess. Good luck!

I run two programs, a game and it's walkthrough guide (notepad). While playing, i switch between game and it's guide using
ALT & TAB. so I can play game with walkthrough guide.

I hope you don't mind my saying this but you could equally easily switch between your game and a pdf print of the guide and you'd have the added benefit of seeing the guide laid out with all its graphics as its author intended.

I also suggest that you consider switching between your game and another instance of your browser that is on the webpage for the guide [instead of any printout of it]. That would ensure that you would always be looking at the latest version of the guide.

Then edit / format with whatever you want.

Not sure why you'd want to capture a web site as text though -- seems that print as pdf as others have suggested would be the best option. Both Edge and firefox have that capability.

    Cheers
