When the March MS Update killed the old Edge and installed the NEW Edge, it left behind fragments of the OLD Edge.
You CAN remove the NEW Edge, but if you try to remove even the remnants of the OLD Edge... it will break Windows Update.

On my system it states that the New Edge is 63Bit so why is it in the x86 folder?? I have no interest in removing it, I would like to block it some how so that MS stops nagging me about not keeping it default!Well yeah... the NEW Edge is there.

I use FF... I have a tweak that will make FF the default... and seems to stop Edge complaining.
In about:config, findbrowser.shell.checkDefaultBrowserand set it as false.
This will allow you in Tools > Options to UNcheck: "Always check if Firefox is your default browser".
This seems to help when in Windows, you set FF to default browser. It seems to set that MORE firmly.
Plus, I blocked Edge in the Bitdefender firewall. That may help as well.

I dont like Edge, never have done, if any, I prefer good old IE. As far as I am concerned its an interface for anything MS want to sell you, interest you, or believe their biased political views. None of which apply to my humble English mind. Now, MS, either go back to a decent IE, or I stick with an independent browser like Vivaldi. AND I will keep deleting Edge as long as you try to foist it on me.
@hdmi: there's no Microsoft Edge.lnk in that folder for me.
I have the same problem as OP after the last update.
I had uninstalled ChromEdge previously and the last couple of WUs didn't install it back. Maybe if I had kept ChromEdge the Start Menu old Edge shortcut would have been just updated/changed to ChromEdge. Is that what happened to those who have ChromEdge installed?
My shortcut has a Creation Date that appears like it must have been created by thePatchBotch Tuesday update from June 9, 2020. This update did include a security update for Edge so probably that explains this Creation Date. Date Modified also reveals that this shortcut gets updated frequently, probably during each update installation of Edge.

FYI, when I received that particular Windows update I was still running on Windows 10 version 1909, as I had received neither the 2004 feature update nor the 20H2 feature update until some time in December (i.e., from May till December, my Windows Update kept showing a huge stroboscopic info message saying they were still busy trying to figure out whether my hardware could support the May update.)
