I don't actually use Edge but after reading your reply I updated to the current version and tried some experimentation. I'm not able to clear the Bing text on the 'Image of the Day' using any of the settings and can't locate a solution online either. I did look much longer than I'll ever admit.

After reading an unsolved thread with the same question at a Microsoft Community help desk dated June 2020, I suspect the only solution is to accept the feature or find a better browser.
Sorry, I'm not a fan of using Edge and don't have a better answer.
