    Try this
Right-click your Microsoft Edge shortcut and select “Properties.” On the Shortcut tab, add -inprivate to the end of the Target box. That's a space, one dash, and then “inprivate”.
-inprivate without the quotes Click “OK” to save your changes. Then edge should always open In Private mode when you launch it from this shortcut

    That's just for the shortcut...

I already know how to do that. My question was not about just for a shortcut.

if you right click on your edge icon on the taskbar and then right click where it says Microsoft Edge
    And select properties

    make edge inprivate everywhere-annotation-2020-06-30-104525.png

    And change the default target
    "C:\Program Files (x86)\Microsoft\Edge\Application\msedge.exe" --profile-directory=Default
    Remove --profile-directory=Default
To Remember to leave a space -inprivate
    So it looks like
    "C:\Program Files (x86)\Microsoft\Edge\Application\msedge.exe" -inprivate

Your browser will always start in private mode

I don't have Edge pinned to my taskbar and anyway that would only change it for the taskbar pinned icon I think?

Yes that would be for the taskbar icon

You could do this by clicking on START - In the start list - Right click on Microsoft Edge
And select MORE and click on OPEN FILE LOCATION and right click on Microsoft Edge
Select Properties and change the link Target to
    "C:\Program Files (x86)\Microsoft\Edge\Application\msedge.exe" -inprivate

    make edge inprivate everywhere-annotation-2020-07-01-105247.png

And the edge browser should always load in private mode

If you add mschredge or mschredge.exe it will give an error - or gives the error
