Store Apps -- Mail is one -- should update automatically.
If they don't seem to be, click the Store icon in the taskbar. When it opens, click the little icon immediately to the left of the search bar. Select "Downloads" from the dropdown menu. Click "Check for Updates".
Users are reporting a number of issues with Mail. I can't use it because it hasn't synched with the folder changes I made at outlook.com, nor can I get it to work with an IMAP provider. Until it's fixed, I'm using Live Mail from the old Windows Essential package.
The Windows 10 Mail app on my machine will no display content. It only displays the header -- From, subject, etc -- and that's it. I can't figure out how to make it display the rest. I have updated and re-install the app several times. It does not work, although it did when I first installed Win 10. The app shows promise by MS has never been able to get these apps to work. Even in Win 8.1 there were enough issues with the mail app to make it toxic to most users.
I just did a clean install of Windows 10 Pro and I am running into similar problems... The mail app works fine on my Surface Pro 3 but on the Desktop I get nothing... it shows the header info but no content.
