Microsoft is testing some changes to Edge's Tracking Prevention settings in Canary (v98):

Another change in Canary is a new option on the Acessibility page, "image descriptions":


This article describes how this option works in Chrome, I think the same will apply for Edge.

This new option is available in the latest Edge Canary build.

Edit, apparently today Microsoft has enabled this option via server in all versions of Edge.
