It's sad that the workaround that existed to enable the "extensions toolbar menu" no longer works in Edge (Canary and Dev). Unfortunately the flag that served to enable (or disable) that menu was removed from Chrome 87 and that's why the workaround no longer works in Edge. I got completely used to having the extension icons in that menu in Chrome and in Edge, it's going to be hard to get used to having those icons at the top of the ellipsis menu. I don't know why Microsoft never officially enabled that feature in Edge .

Microsoft has improved Edge's built-in translator, now you can translate the selected text:

    (click to play the gif).

This option is available in Edge Canary, but it could be part of the "Controlled rollouts" so some insiders could have it in Edge Dev. This feature is not available in Chrome natively.

Desktop Web apps now support URL protocol handlers in Edge Canary:

AFAIK, this means that clicking a link on the web it would open registered PWAs that have been installed on the PC. For example, if you click on a link of a YouTube video on the web, the video will open directly in the PWA (instead of opening in the browser), and the same will happen when you click on other links to posts on Reddit or in Twitter or here, they will open in their respective PWAs if you have them installed, you can currently do this by right clicking on the link:

The user will have full control over which apps can be opened when clicking on a link thanks to a new option in the Cookies and site permissions section called "Application links":

According to the document on GitHub, it's up to the developers to add support for this feature but I suppose that those sites that can be installed as apps and that are not developed by the site owner will have this option enabled by default, so far I have not found any PWA or any of the sites that can be installed as app where this new feature works.
