Similar - go to Settings and then to New Tab page > Customise. You can then click Customise box to edit the detailed setup choices. Once you get there it was not so obvious as before, but with a bit of experiment you will get what you want. (I started from scratch without any advice, and worked it out quite fast. Admittedly I wanted Bing as I prefer it nowadays.)
Yes I have figured out how to customize the new page in just about every way which for me mostly a blank page, but I can't replace that Bing Search for Google Can't even make it go away. As much as I don't like Google their search engine is still excellent and just works better for me.

I just looked and my office computer is also at .69 still

    - - - Updated - - -

I have officially uninstalled Chrome still have IE 11 I don't think there is anyway to uninstall it. and its there encase i run into a website that won't work with the new Edge. I really didn't think I would ever be saying this, after all these years MS has gotten serious about Edge and made it useful.

It can be done, took me awhile to find it. MS has neatly tucked/hidden it. Here's how if you already haven't found out how.

How to Change Default Search Engine in Microsoft Edge Chromium

    1. go to settings
    2. go to privacy and services
    3. scroll down to address bar
    4. click address bar
    5. click manage search engines.
