"Workspaces" in Edge Canary (controlled roll-out):
    Create workspace
    Switch between Workspaces.
    Remove Workspace.

The button has no label in the horizontal tab strip:
    Without VT button.
    With VT button.

You can also create Tab groups within Workspaces, and when you reopen those Workspaces, the groups will still be there:
    Tab groups within Workspaces

How well does Edge keep up with the Chromium updates, and how can I know the Chromium version of a given build of Edge?
    I running
Version 91.0.845.2 (Official build) dev (64-bit)
on Linux. For comparison's sake, my Google Chrome browser is on
    Version 89.0.4389.114 (Official Build) (64-bit)

I'm not an Edge expert, but keep something in mind. Edge and Google's Chrome use code from the same Chromium public code base, but make their own mods and features and tweaks, just like any other Chromium based browser. It would be like comparing apples to oranges if you try to equate the two or their current public release levels.

True, but the security updates very often affect all Chromium-based browsers, so that's the point I want to clarify. Security-wise, is my Edge dev browser keeping up with things?

No idea. Maybe you could ask in the Edge Forum for Developers. Others here may know, also.
