Go ahead and post a screenshot of what is opening to see if anything may stand out as a cause.
You might also check your startup items to see if Microsoft Edge may have gotten added somehow by mistake.

In addition, check to make sure Fast Startup is turned off to see if that may still be loading it the next time you restart afterwards.
