How do I change Chrome user data path?

Is there a way I can change the below default Google Chrome User Data path to some selected folder of my choice say in D:\Chrome Data?

    C:\Users\<username>\AppData\Local\Google\Chrome\User Data

I don't know of a simple way to be honest. The only way I have found is this; Easier way to move the location of Google Chrome Cache User Profile - A Collection of Essential Guides - Neowin. I'm unsure if this will work for WIndows Ten, but I don't see why not.

I moved the Chrome cache from my SSD successfully using a sybolic link but a few days later my symbolic link had been deleted and the cache was back in its old location!
I have tried this half a dozen times and the same thing keeps happening - sybolic link deleted and cache back in old location, not immediately however but after a week or so.
Did you experience the same issue? (Windows 10 Pro 64)
