You can. Right click the icon and click New Window.



I just opened two sessions... see the thumb windows at bottom.

In addition, something I use often when I want to move a page to another display is to right click the tab and select Move to new window, then drag the new window to another display:

There is a tutorial at How to Create a Microsoft Edge Shortcut

For example, one way to make an Edge shortcut is to drag the entry in the Start menu to your desktop and then put it anywhere convenient for you. Each time you use that shortcut [or the original one in the Start menu] it will open a new instance of Edge.
