    Paragon Hard Disk Manager

    HDM 16 is available free . It is a "preview" edition, though it is not time limited.

    Sadly, the option to exclude to files/folders from backup image seems to have been removed.

    That's certainly a different HDM/Hard Disk Menu program than what I used back in MS-DOS with Win3.xx, loaded at boot-up to give choices of what to load. I think I still have a copy of that one, just looked, do still have it saved as a WinImage copy.
